Fairway Creme Brulee
yields 2 servings

Ingredients:
1 cup Heavy Cream
2 Egg Yolks
1 Tsp. Vanilla
1 Tblsp. Sugar

Beat egg yolks and sugar thoroughly. Add vanilla and mix well. Warm up cream in the top of a double broiler. Remove cream from heat and pour into egg yolk mixture, beating constantly. Pour into 2 heat resistant ramekins and cook “bain-marie.” The bain-marie process involves placing the ramekins in 1/2 inch hot water in a deep baking pan. Cook 30 minutes in a pre-heated oven set to 350º. Remove from oven and allow to cool with ramekins remaining in the water. (After cooling, custard may be used immediately or refrigerated for several days for future use.)
Sprinkle a thin layer of sugar on top of the custard. Caramelize immediately using a hand-held propane torch, heating until custard has a nice brown crystalized crust.

Tarheel Hush Puppies
Serves 6

Ingredients:
1 lb. Fine Corn Meal
1 Egg
1 Tblsp. Salt
1 Tblsp. Sugar
A pinch of Baking Soda
1 Cup Buttermilk
Combine all ingredients and stir, adding water til a thick consistency. Drop into a deep fryer (preferably using peanut oil). Cook in temperature of 375º degrees.

Broccoli Pine Nut Pasta with Italian Sausage
Serves 4

Ingredients:
½ cup of olive oil
½ cup pine nuts
4 cloves garlic chopped
2 cups broccoli crowns steamed until just tender
4 cups cooked bow tie pasta
1 lb hot Italian sausage thin sliced
Shredded parmesan cheese
Salt and Pepper

Brown sausage and set aside. Add olive oil to pan. When oil is hot add pine nuts and cook until they start to toast. Add garlic and cook until nuts brown. Salt and pepper to taste. Remove from heat and toss in pasta. Gently toss in broccoli to coat with oil. Spoon pasta mixture onto plate and top with sausage. Top with shredded parmesan cheese. Enjoy!
